The Return of Real Rye

 

Before the dark days of Prohibition forced American whiskey into the shadows, rye was the undisputed king of the glass. It was a spirit defined by character, not compromise—bold, spicy, and grain-forward, with a complexity that modern mass-production largely smoothed away.

 

For decades, that true "Pre-Prohibition" profile was a ghost story, a flavor lost to time and changing tastes. 

Mersey Recipe No.6 & Captain’s Cut are our answers to that silence. We didn't want to just make a Rye; we wanted to resurrect a legacy.

 

By returning to a combination of spicey and sweeter mash bills, along with extended aging in Char No. 4 barrels, we have captured the raw elegance of the original American spirit. 

This is whiskey with a backbone—unfiltered, undeniable, and exactly how it would have tasted a century ago.

 I very much enjoy this Mersey Rye. The two mash bills work very well together, with the fruit flavors tempering the rye spices a bit. But, the ryes spices are definitely still there. This is a rye that would likely be enjoyed by those who are fans of the 95/5 (95% rye, 5% malted barley) ryes, as well as those who are not as much a fan of the “in your face” rye flavors.
